1 MED CHOPPED ONION
1 SMALL RED CAPSICUM (CHOPPED)
1 CLOVE CRUSHED GARLIC
1 MED TOMATO
2 TBS TOMATO PASTE
2 MED ZUCCHINIS (SLICED)
1 CAN CANNELLINI BEANS
1 TSP OREGANO
1 TSP THYME
¼ TSP CAYENNE PEPPER
1 TBLS BRAGG LIQUID AMINOS (Available from health stores)
2 TBLS FINELY CHOPPED PARSLEY
¼ CUP WATER or more if needed
METHOD
BROWN ONION, CAPSICUM, AND GARLIC, THEN ADD TOMATO, TOMATO PASTE AND BRAGG AMINOS. SIMMER FOR 1-2 MIN THEN ADD ENTIRE CONTENTS OF ONE CAN OF CANNELLINI BEANS. ADD REMAINING INGREDIENTS (SPICES LAST) AND SIMMER UNTIL ZUCCHINI SOFT, STIRRING OCCASIONALLY.
MAY BE SERVED ON BASMATI RICE OR BROWN RICE.
